Top Heavy Crumb Cake, and a Chocolate Double Layer Cake

Today, I sent my FFH(firefighter husband) off to work with:
Top Heavy Crumb Cake and
this Chocolate Double Layer Cake. I did decorate this cake, you can see finished product at bottom of post.
Before I begin however, I though you might find this amusing. My 8-year old daughter (my Baby), Marina, had to do this project in school for V-Day.
One of her reasons stopped me dead in my tracks. I almost spit out my Dunkin Donuts large cream only coffee. (AND I am a swallower not a spitter, get my meaning??)YOU all will appreciate this reason. I KNOW it.
Bada Bing, Bada Boom, Rachachacha! Yohoho and a bottle of rum, did I smile at that!
Onto the business at hand, MY Top Heavy Crumb Cake.
This recipe I altered from a couple of community type cookbooks to make it mine. And if that doesn't make it mine, you can tell me, and I will drop kick you. Nicely.
What is good.. excellent.. about this cake is that the crumbs are thicker than the cake. You know like blood is thicker than water. I'd estimate the ratio is about 3 to 1. 3 crumbs, 1 cake. So outlandishly awesome. Honest to goodness, I am asked for the recipe over and over again. And I am NOT one of those people who doesn't give out recipes. I am one of those people who will give it out and then require something in return though, be it ten dollars, be it babysitting my children for a few hours, be it a back massage or a foot rub, or maybe even a happy ending. Do you know what a happy ending is? If not, please email me and I will have FFH explain it to you.
MY Top Heavy Crumb Cake
Let's begin with the crumbs, baby the crumbs, the foodgasmic crumbs!!
Get you 3 sticks of butter and melt them
While they are melting place your white sugar, brown sugar, cinnamon, and flour in a bowl. Make sure you line them up the way I did, or it won't come out right.
Please don't tell me you think I am serious about the lining up part. If you think I'm serious about that, I am also going to tell you I am wearing a tiger printed thong right now and nothing else. And sitting right next to me is my friend the kielbasa
that we spoke of here . Remember that my FFH is in the firehouse today, you know. Comfort is a basic human need.
Anyway, mix those dry ingredients together, then slowly pour in your melted butter.
Pour it in slowly, using a fork or spatula to mix and begin to form large crumbs.

They should look like that. Now, add the vanilla, and mix gently. Don't you like the word gently. Say it.. Gently, Gently, it could be a name. Come here, Gently. Gently, don't do that. Gently, Oh, Gently. Say it Gently. Gently. GGGGEEEENNNNTTTTLLLLYYYY!!!! Like that word. When it's all mixed, set aside, and let's have our lunch. Here is our lunch. Join me, will you?

Set aside 2 large crumbs eat them and enjoy them and always remember that I am smarter than the average bear.

For the cake part, You will need:

and some H2O. Mix all ingredients together with electric mixer till smooth,
Now pour some in a jelly roll pan, NOT all of it, I repeat NOT all of it. I like to pretend I am a secret spy official when I say that .. you know give a command and then say the word repeat with the command again. I feel so in-power-like. Anyway, pour just enough to cover the bottom, use the rest for edible lotion, or make a single layer cake out of it. I decided not to insert a picture of what we-um-I did with the rest of ours.
Place this in your 350 oven for about 15 minutes .. this is a bit tricky.. or until the cake can hold the weight of the crumbs.. CAREFULLY, ever so GENTLY.. hey that word again.. begin to place the crumbs on the cake, while in the oven. Please don't burn yourself like I do each time I put crumbs on cake.
You are probably wondering why I just don't take the pan out and place the crumbs on. Well, a few reasons, laziness, I'm Polish, I enjoy a little pain, and I want to see if I can ever do it without burning myself...
Continue doing so until it is thick and completely covered with the goodness of the foodgasmic crumbs.Bake until the toothpick says it's OK for the cake to come out. That'll do. Cool your cake on a rack, sprinkle with confectioners sugar, cut into squares,
Oh Yes, Now you're talking. Yep. Calling my name!

Pack these beauties up for your FFH and his fellow firefighters to enjoy

and then begin to make them your double layer chocolate cake for dessert.
This is a Chocolate Double Layer Cake adapted from The Cake Mix Doctor Cookbook.
Gee, this is a semi-homemade kind of post isn't it. Forgive me foodie people, but I am the girl next door with a dash of oddity thrown in. I do girl next door kinda cooking. And when something tastes good, be it homemade or boxed, I will use it. I go both ways. Hee Hee.
Begin by getting these 2 items.
Now, I would like you to place some chocolate chips and pecans in a bowl, like so
Sprinkle them with 2 tablespoons of the cake mix.
Then mix them together to evenly distribute the cake mix. Think of George Clooney for a minute. Why? Why not? Now to your pudding mix and the remaining cake mix, in a large bowl add all of this stuff these items. And some agua. I am bilingual.
Mix with an electric mixer till smooth. You will Have to scrape the sides down a few times, it is a thick gooey mass of yumminess. Fold in your chocolate chips and pecans Then pour into your 2-8 inch cake pans that have been sprayed with the wonderful nonstick spray with flour added stuff
Bake till Mr. Toothpick says its OK to take out.. Cool and cut off tops of cake, Look at the beauty that is the inside...Now place one layer on cake plate, frost with Hershey's Perfectly Chocolate frosting.. You can read about this at Spryte's Place, it is the one I used , and it is delicious. Check out her blog to see it in person, OK? She is a joy, and she has a lovely toe ring. AND she cooks up a storm!

Frost between the two layers and all around. Then just to make your FFH's day, Just to make the firefighters, fighters of flames and all things hot, laugh and smile, Decorate it like this. And make sure to tell anyone who reads your blog that this is not a true to size decoration of your FFH, it is not. If it were a true to size drawing of your FFH , it would need to be decorated onto a sheet cake! I am a lucky, naughty girl.

What word begins in F and ends in UCK? Firetruck. FIRETRUCK, people. Wow, where do your minds travel?

Laughter is a form of medicine.

  58. The crumb cake turned out awesome! It will be my go to crumb cake. I actually used a homemade cake mix (thanks
Suzanne of Chickens in the Road blog) and didn't have any instant pudding mix, so I used a cook and serve pudding mix instead, it worked great.

  59. Hi!

Thank you for the recipe, I just blogged about it!
Instead of using eggs/oil in the cake mix, I used 10oz diet 7-up and an egg white to 'lightened it up' (I didn't want the cake to be to heavy, with all the butter and flour)

I used all the cake batter but made 3 cakes. The baking time was very tricky, (7min, then 15min for me) but it turned out very good!

    Thanks a bunch!
